Rip City Recipes: Jake's Waffles w/ Maple Bacon Rum Syrup

Maple Bacon Rum Syrup:

1 Cup Sugar

3/4 Cup Water

6 Strips thick cut bacon, cooked and crumbled

1 teaspoon Molasses

1 Cup Corn Syrup

2 Tablespoons Maple Syrup

1 Cup Heavy Cream

2 Tablespoons Butter

1/2 teaspoon salt

1 1/2 teaspoon Vanilla Extract

Place sauce pan over medium high heat on stove, add in sugar, water, corn syrup, molasses and maple syrup. Heat until sugar is dissolved stirring constantly. Once syrup is dissolved increase heat to boiling and let boil stirring the pan as this happens until syrup turns amber golden brown. Once color change happens remove from heat and slowly add cream while whisking. Return to heat after you have poured in all of cream and heat back to boil. do so until it turns back to a thinner liquid constancy, then start to add salt, butter and vanilla extract. Keep stirring until all ingredients are combined well. Remove from heat and add bacon. Either store after fully cooled or serve warm with pancakes or waffles.

Jake's Waffles:

4 Cups Flour

1/2 Cup Sugar

2 Tablespoon Baking Powder

1 teaspoon salt

2 Cups milk

1 Cup heavy cream

2 Tablespoons vanilla extract

2 Sticks butter melted

6 Eggs; separated

Sift your flour, sugar, baking powder and salt together. Set aside. Next whisk together milk, cream, egg yolks and melted butter. Combine both dry and wet ingredients. Take egg whites and whisk until stiff peaks form. Slowly fold in the egg whites into waffle batter. Heat waffle iron and cook to desired doneness serve and enjoy.
